Method
Boil Pasta
Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to package instructions until al dente (firm to the bite). Reserve about 1/2 cup of pasta water before draining.
Crisp Pancetta
While the pasta cooks, heat olive oil in a pan over medium heat. Add the diced pancetta or bacon and cook slowly for 5–7 minutes until it becomes crispy and golden, releasing its flavorful fat.

Fragrant Garlic
If using garlic, add it to the pan and sauté briefly for about 30 seconds until fragrant, being careful not to burn it.
Whisk Emulsion
In a mixing bowl, whisk together the eggs and grated parmesan cheese until smooth and slightly thick. Add a generous amount of black pepper for authentic flavor.
Flavor Infusion
Reduce the heat to low. Add the drained hot spaghetti directly into the pan with the pancetta and toss well so the pasta absorbs the flavors.
Off-heat Creaming
Remove the pan from direct heat to prevent scrambling the eggs. Quickly pour the egg and cheese mixture over the pasta while tossing continuously to create a creamy, silky sauce.
Glossy Sauce
Add a small amount of reserved pasta water gradually, stirring continuously, until the sauce reaches a smooth and glossy consistency that coats the pasta evenly.
Final Seasoning
Taste and adjust seasoning with salt and additional black pepper if needed.
Hot Serving
Serve immediately while hot, topped with extra grated parmesan cheese and a sprinkle of black pepper.

Fresh Enjoyment
Ensure the dish is served fresh, as the sauce thickens quickly and is best enjoyed right after preparation.
Cook’s tips
- Do not use cold eggs; let them reach room temperature for a better emulsion.
- Quality of black pepper is everything—use freshly cracked toasted peppercorns if possible.
- Always remove the pan from the heat before adding eggs to avoid a "scrambled egg" texture.
