Method

1

Jaggery Syrup

Break the jaggery into small pieces and dissolve it in a little warm water. Stir well until it becomes a smooth syrup, then strain to remove impurities if needed.
2

Gentle Whisk

In a mixing bowl, whisk the eggs gently until well combined but not overly frothy.
3

Coconut Blend

Add coconut milk to the whisked eggs and mix slowly to maintain a smooth custard base.
4

Sweeten

Pour in the jaggery syrup and stir continuously until the mixture becomes evenly caramel-colored and smooth.
5

Spice Infusion

Add cardamom powder, vanilla extract, nutmeg, and a pinch of salt. Mix well so the aroma blends evenly.
6

Cashew Fold

Fold in chopped cashews, reserving a few for topping.
7

Mold Prep

Pour the mixture into small heatproof molds or a single dish.
8

Slow Steam

Cover with foil or lid and steam on low heat for about 30–40 minutes until the custard is set but still slightly wobbly in the center.

9

Doneness Check

Check doneness by inserting a toothpick; it should come out mostly clean.
10

Cooling

Allow it to cool completely before refrigerating for a few hours for best texture.
11

Chill & Garnish

Serve chilled, garnished with extra cashews on top.

Cook’s tips

  • For the authentic rich brown color and deep flavor, always use dark Kithul jaggery if available.
  • Do not over-whisk the eggs; you want a smooth custard without too much air which can cause it to separate during steaming.
  • Always strain the jaggery syrup before adding to the eggs to ensure a perfectly smooth and grit-free dessert.

Frequently asked questions

Can I use brown sugar?

Yes, but the flavor won’t be as deep. Palm sugar is a closer substitute for jaggery.

Why is it wobbly?

A slight wobble in the center is perfect; it will firm up completely as it chills in the refrigerator.
